2-3 lbs. boneless skinless chicken breasts, cut into bite sized pieces

2 tbls. extra virgin olive oil

2 large cloves garlic, crushed

1/4 tsp. ground ginger or more if you like a stronger ginger flavor

1/4 tsp. kosher salt

1/4 tsp. cayenne pepper - or more if you like it spicy

2 tbls. applesauce, sweetened or not

1/4 cup bourbon or whiskey

1/3 cup light brown sugar

2 tbls. ketchup

1 tbls. cider vinegar

1/2 cup water

1/3 cup lite soy sauce

steamed rice

1 pkg frozen broccoli

Whisk all ingredients into a crockpot. Add chicken and coat with mixture. Cook on low for 6 hours or high for 4 hours. Serve over rice. Cook broccoli according to package directions.

1 - 1 1/2 lbs pork tenderloin or Ioin,teriyaki flavored

12 oz package linguine noodles

1 c carrots, cut into julienne strips

1 green bell pepper, cut into julienne strips

3 green onions, sliced

1 bottle teriyaki sauce

1 pkg frozen broccoli

Cook pork by package directions, though I get the best results when I slice it (1 1/2" slices) before roasting it (it's usually 20 min/pound). Cut cooked pork into bite size pieces. Boil linguine noodles by package directions and add carrots & bell pepper. Add green onions for 1-2 minutes. Drain water when cooked. Add pork with noodles & vegetables. Stir in teriyaki sauce to taste. Serve with steamed broccoli.

2 ears of sweet corn, shaved off the cob

1 Tbsp. olive oil

1/2 white onion, diced

1 lb. raw shrimp (any size), peeled and deveined

2 tsp. chili powder

1/2 tsp. ground cumin

salt and pepper

1 (4 oz.) can chopped green chiles

1/3 cup chopped fresh cilantro

12 small (6-inch) flour tortillas

1 avocado, peeled, pitted and diced

2 cups grated Monterrey Jack or Pepperjack cheese

fresh lime wedges

Preheat oven to 425 degrees. Heat a skillet over high heat. Add the corn kernels and let them dry-roast for about 6-8 minutes, stirring occasionally, until their edges begin to brown and caramelize. Transfer the corn to a plate to set aside. Reduce heat to medium-high, and (carefully) add the oil until heated. Add onion and saute for 5 minutes or until cooked and translucent. Add the shrimp, chili powder, cumin, and a pinch of salt and pepper, and stir to combine. Cook for 3-5 minutes, or until the shrimp are cooked and no longer translucent. Stir in the chopped green chiles and cilantro and cook for an additional minute, then remove from heat. To assemble the taquitos, place a large spoonful of the shrimp mixture down the center of a tortilla. Then top with some diced avocado and a generous sprinkle of cheese. Roll up the tortilla and place seam-side down on a greased baking sheet. Bake for about 15-20 minutes, or until the cheese is melted and the tortillas are crispy. Remove and serve immediately with optional toppings and salsa for dipping.

3 cups cooked shredded chicken

6 ounces ounces cream cheese, softened

⅓ cups sour cream

½ cups salsa

1½ cups colby jack cheese

1½ cups chopped baby spinach, stems removed

12 6 inch corn tortillas

vegetable or canola oil, for frying

Heat ½" oil in a sauce pan on medium heat. In a large bowl mix together the chicken, cream cheese, sour cream, salsa, co-jack and spinach. Add salt and pepper to taste. Once oil is hot enough (place hand over pan, above oil, to feel heat), add a few tablespoons of chicken/cream cheese micture to the center of a tortilla and spread out. Roll up and set seam side down in oil using tongs. Cook until golden brown on both sides. Repeat until all the tortillas are filled, rolled and fried. Set on paper towels to drain. Serve warm and ENJOY!

2 1/2 c uncooked bow-tie (farfalle) pasta

1 lb lean ground beef or turkey

1/2 c chopped green onions

1 can cheddar cheese soup

1 c salsa

1 1/2 c shredded cheddar

1 pkg frozen green beans

Cook and drain the ground beef. Reserve 2 tablespoons onions for garnish; stir remaining onions, the soup and salsa into beef. Heat to boiling. Reduce heat to medium-low; cook 5 minutes. Stir in cooked pasta; cook 3 to 5 minutes, stirring occasionally, until thoroughly heated. Sprinkle with cheese; cover and cook just until melted. Sprinkle with reserved 2 tablespoons onions. Prepare green beans. Note: To make ahead, cook the pasta and toss with 1 teaspoon oil in a resealable food-storage plastic bag. Refrigerate until it's time to add it to the skillet.

one pound large shrimp, shelled and deveined

4 Tbs olive oil, divided

lemon zest from one lemon

1/2 tsp salt

1/2 tsp pepper

2 lb broccoli

1 teaspoon whole coriander seeds (or 1/2 tsp. ground)

1 teaspoon whole cumin seeds (or 1/2 tsp. ground)

1 tsp salt

1/2 tsp pepper

1/8th tsp hot chili powder

1. Heat the oven to 425. Put rice in the rice cooker. 2. On a large cookie sheet, toss together 2 pounds of broccoli cut up into florets (but not teensy tiny florets, I like a little stem attached), 2 Tbs olive oil, 1 teaspoon whole coriander seeds (or 1/2 tsp. ground), 1 teaspoon whole cumin seeds (or 1/2 tsp. ground), 1 tsp salt, 1/2 tsp pepper and 1/8th tsp hot chili powder. Spread into a single layer and pop into the oven for 10 minutes. 3. Meanwhile, toss together one pound large shrimp, shelled and deveined, with 2 Tbs olive oil, lemon zest from one lemon, 1/2 tsp salt and 1/2 tsp pepper (I just eyeball the salt and pepper) in a bowl. When the broccolis been in the oven 10 minutes, add the shrimp to the broccoli and toss (carefully.) 4. Roast another 10 minutes, tossing once halfway through, until the broccoli is tender and golden around the edges.

1/2 lb breakfast sausage, browned

1 c grated Cheddar cheese

6 eggs

1 cantaloupe or honeydew, peeled & sliced

Mix flour, sausage, & cheese together to form stiff dough. Mix in drops of milk if mixture will not hold together. Roll into 1 1/2" balls then press flat Into biscuit shapes. 2 15 oz can mixed vegetables (with potatoes), drained

Put one of the pie crusts in a pie plate. Mix all of the other ingredients in a large bowl, then pour into the pie crust. Lay the remaining pie crust over the pot pie. Crimp the edges and cut off the excess crust. Cut slits in the pot pie for ventilation. Bake for at least 1 hour. (It works well for me at 1 hour 15 minutes.)

Place chicken in crockpot (can be frozen). Dump taco seasoning, cilantro, salsa, and lime juice on top. Cook it on Low for 6-8 hours. Shred the chicken. Make tacos with it and your favorite toppings.

2 packages (one 16 ounces, one 8 ounces) spaghetti

1-1/2 pounds ground turkey or beef

1 large green pepper, chopped

1 medium onion, chopped

2 cans (15 ounces each) tomato sauce

1 package (8 ounces) sliced pepperoni

1 can (8 ounces) mushroom stems and pieces, drained

1 can (3.8 ounces) sliced ripe olives, drained

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1/4 teaspoon garlic salt

1/4 teaspoon pepper

4 cups (16 ounces) shredded part-skim mozzarella cheese

1/2 cup grated Parmesan cheese

1 bag salad

Cook spaghetti according to package directions (minus 2 minutes so the pasta isn't mushy since we're baking it, too). Meanwhile, in a Dutch oven, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Stir in the tomato sauce, pepperoni, mushrooms, olives and seasonings. Drain spaghetti. Spoon 1 cup meat mixture into each of two greased 13-in. x 9-in. baking dishes. Layer with spaghetti and remaining meat mixture. Sprinkle with cheeses. Cover and freeze one casserole for up to 3 months. Bake the remaining casserole, uncovered, at 350° for 20-25 minutes or until heated through. Make bagged salad. To use frozen casserole: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 40 minutes. Uncover; bake 5-10 minutes longer or until cheese is melted.

1 pound medium shrimp, peeled and deveined

2 tablespoons olive oil, divided

1 tablespoon cajun seasoning

4 slices bacon, diced

2 large eggs

5 cups chopped romaine lettuce

1 avocado, halved, seeded, peeled and diced

1 cup canned corn kernels, drained

1/2 cup crumbled goat cheese

1 cup loosely packed cilantro, stems removed

Juice of 1 lime

1 jalapeo, optional

2 cloves garlic

Kosher salt and freshly ground black pepper, to taste

2 tablespoons olive oil

2 tablespoons apple cider vinegar

To make the cilantro lime vinaigrette, combine cilantro, lime juice, jalapeo and garlic in the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add olive oil and vinegar in a slow stream until emulsified; set aside. OR replace this delicious, but painful dressing with your favorite store-bought dressing. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. Place shrimp onto the prepared baking sheet. Add 2 T olive oil and 1 T cajun seasoning, and gently toss to combine. Place into oven and roast just until pink, firm and cooked through, about 4-5 minutes; set aside. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside. Place eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil and cook for 1 minute. Cover eggs with a tight-fitting lid and remove from heat; set aside for 8-10 minutes. Drain well and let cool before peeling and dicing. To assemble the salad, place romaine lettuce in a large bowl; top with arranged rows of shrimp, bacon, eggs, avocado, corn and goat cheese. Serve immediately with cilantro lime vinaigrette.
